BAKED ACORN SQUASH WITH APPLE-NUT STUFFING
2 medium acorn squash (about 1 pound each)
1 large unpared tart red apple, diced
2 tablespoons chopped nuts
1/4 cup packed brown sugar
4 tablespoons margarine or butter
Heat oven to 400 degrees F.
Cut each squash lengthwise in ha1f remove seeds and fibers. Place cut sides down in rectangular baking dish, 13x9x2 inches. Pour water into dish to 1/4-inch depth. Bake 30 minutes.
Mix apple, nuts and brown sugar. Turn squash halves cut sides up. Spoon apple mixture into squash halves. Top each with 1 tablespoon margarine. Bake 30 minutes longer.
Makes 4 servings
