Recipe: Large Quantity Make Ahead Spaghetti Dinner

As far as the spaghetti goes, they have those a lot here in our part of TX. All of the ones I have been to combine the pasta and the sauce beforehand and keep it warm in large turkey roasters. Good Luck!

We do about 3 spag dinners a year as fundraisers. Sauce is cooked ahead and kept on stove in double boiler. We make the pasta ahead and leave it in water (covered) in the fridge. We find it better to NOT put oil in the water as it serves as a buffer between the pasta and sauce and the sauce doesn't stick as well. have the pasta in a colander (china/cone) and dip into hot water and drain. We also serve a breadstick from Sysco that we put a little butter and garlic on.
Another idea is to approach all of the restaurants in your area to donate food items or money to help defray the cost of the food. Usually the local dairy will provide their products, etc.

Thank you to all for your help. Our dinner was a huge success. We made 1300 to donate to the church that had a fire. We served about 160 people and received alot of donations from the local food stores, WAWA and butcher.
I cooked 24 lbs of spaghetti and had three roasters full of sauce and meatballs. I find that the roasters work better than pans on the stover because you don't have to worry about burning the bottom of the pan.
Cooking the spaghetti ahead of time worked out great. That was what made the dinner rush alot easier to handle.
