Recipe(tried): Last Night's Stir-Fry

Here is what I made for dinner last night night. I got the recipe from the TV show "Taste" on the Food Network. The original recipe called for lobster, but altered it and used shrimp and some other goodies instead! It was very good! Pefect for two people!


STIR-FRIED SZECHUAN SHRIMP WITH CHILI SAUCE

1 tablespoon hoisin sauce
1 tablespoon Chinese chili sauce
1 teaspoon Shao Hsing or dry sherry
1 teaspoon thin soy sauce
1/2 teaspoon Chinese chili paste with garlic
1/4 teaspoon sugar
1 teaspoon honey
1/4 teaspoon toasted sesame oil
1/4 teaspoon hot chili oil
1/4 teaspoon, plus 2 tablespoons peanut oil
1/2 lb. shrimp, shelled and deveined
1 red bell pepper, diced
4 cloud ear mushrooms, soaked in hot water and sliced
3/4 c. sliced water chestnuts
1 tablespoon finely-minced fresh ginger
1 1/2 tablespoons minced garlic

Prepare sauce: In a small bowl combine hoisin sauce, chili sauce, Shao Hsing, soy sauce, chili paste, sugar, honey, sesame oil, hot chili oil, and 1/4 teaspoon peanut oil. Set aside.

Heat a large wok over very high heat. When very hot add remaining 2 tablespoons peanut oil and heat for 1 minute or until smoking. Add bell pepper and water chestnuts and cook for 3-4 minutes.

Add to the wok the ginger, mushrooms, and garlic. Stir-fry g for 1 minute until aromatic. Add shrimp to wok and toss to coat well, cooking shrimp until they are just pink. Add reserved sauce and toss to blend well. Turn out onto a platter and serve immediately.

Serve with rice.

Yield: 2 servings
