Recipe(tried): Dandelion Greens (with bacon, onion, and garlic)

Side Dishes - Assorted
Many years ago when I was a child my father (who had diabetes) would pick dandelion greens in the spring of the year, not only the leaves but also the roots (he would roast the roots then crush and make a tea from them). Anyway, the way he would make the greens was as follows.

In a skillet fry some bacon and add some onion and garlic (I can't give amounts just go by your taste). Saute until the onions are translucent.

Add a handful of the greens and fry until just wilted.

I have made this for myself several times in the past and don't really taste any bitterness, of course I've eaten this all my life. My dad would also add vinegar to his plate at times.

I hope this helps
