Recipe: Lemon and Oregano Grilled Chicken

LEMON AND OREGANO GRILLED CHICKEN

4 (6-oz. each ) skinless, boneless chicken breast halves
5 tsp. lemon rind
1 Tbsp. olive oil
1 1/2 tsp. dried oregano
3/4 tsp. kosher salt
1/2 tsp. black pepper
1/4 tsp. water
2 garlic cloves
Cooking spray
4 lemon wedges
2 Tbsp. chopped fresh parsley

Prepare grill.

Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound with meat mallet or rolling pin until each portion is about 1/4 inch thick.

In small bowl, combine grated lemon rind, olive oil, oregano, kosher salt, freshly ground black pepper, water and minced garlic cloves. Rub oil and spice mix evenly over both sides of each chicken breast piece.

Coat grill rack with cooking spray; place chicken on grill. Grill 3 minutes on each side or until done. Remove meat from heat and place on serving platter.

Squeeze juice from 1 lemon wedge evenly over each chicken breast half. Sprinkle parsley evenly over chicken just before serving
