This is not the recipe you requested, however, I am posting this for you and I would just add currants to the recipe.
Lemon Bread
2-3/4 cups flour
1/2 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening
1 cup sugar
1/2 cup wheat germ
3 to 4 tablespoons grated lemon rind
2 eggs, lightly beaten
1/2 cup lemon juice
1/2 cup water
Preheat the oven to 350 Degrees F.
Sift the flour, baking soda, baking powder and salt into a bowl. With the finger tips or pastry blender, work the shortening in as though making
pastry.
Stir in the sugar, wheat germ, lemon rind and eggs. Mix the lemon juice with the water and stir in.
Mix to moisten the dry ingredients. Turn into a greased 9 x 5 x 3" loaf pan and bake one hour, or until done.
Yield: One loaf.
