LEMON GARLIC CHICKEN
1 (2 to 3 lb.) chicken, cut into pieces
2 cloves garlic, crushed
2 tsp. rosemary
Ground black pepper to taste
1 tsp. grated lemon rind
1/3 cup lemon juice
1/3 cup water
Preheat oven to 400 degrees F.
Remove skin from chicken pieces, rinse, pat dry and place in a baking dish. Sprinkle garlic, lemon peel, pepper and rosemary over chicken. Cover with lemon juice and 1/3 cup water.
Bake uncovered for 30 minutes or until tender.
Makes 4 servings
