Recipe: Raised Pancakes (using biscuit mix, make ahead) (1984)

Breakfast and Brunch
RAISED PANCAKES

1 package active dry yeast
1/4 cup warm water (105 to 115 degrees F)
2 cups Bisquick baking mix
1 cup milk
2 eggs

Dissolve yeast in warm water in medium bowl. Seat in remaining ingredients with wire whisk or hand beater until smooth. Cover and refrigerate up to 24 hours.

WHEN READY TO COOK:
For each pancake, pour scant 1/4 cup batter onto hot griddle. (Grease griddle if necessary.)

Cook until pancakes are dry around edges. Turn; cook until golden brown.

Makes about 13 pancakes
