Recipe(tried): Lemon Truffle Pie......

Hi all! I hope everyone is having a beautiful day like we are here in the
N.C. mountains!!Here is some recipes I think are great and I wanted to share.
Lemon Truffle Pie
1 9" baked and cooled pie shell ( your favorite or store bought)
1 cup sugar
2 TBSP. cornstarch
2 TBSP. all-purpose flour
1 cup water
2 egg yolks,beaten
1 TBSP. margarine
1/2 tsp. grated lemon peel
1/4 cup fresh lemon juice
6 oz. white chocolate baking bar, grated or chopped fine
8 oz. cream cheese, softened
whipped cream for topping if desired

Combine in a small pot, the sugar,cornstarch and flour,whisking well.
Add water,mixing well.Cook mixture over medium -high heat, stirring often,
until mixture begins to thicken,cooking for 1 minute more. Add aboout 1/2 cup
hot mixture to egg yolks, mixing well, then returning mixture back to pot.
Stirring contantly, cook mixture for 2 minutes. Remove from heat.
Add margarine,lemon peel and lemon juice to mixture , stirring well to
combine. Reserve 1/3 cup ..allow remaining to cool.
Add reserved custard to grated white chocolate , stirring to melt chocolate.
If custard isn't warm enough to melt chocolate, warm slightly in the microwave.
Beat cream cheese until fluffy, add melted chocolate mixture.
Pour cream cheese mixture into cooled pie shell. Pour cooled lemon custard
over cream cheese layer, spreading to cover completely.Cover with plastic wrap.
Allow to chill in refrigerator a couple hours to set.Garnish with whipped cream
if desired.
