MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: LIGHT CHICKEN STROGANOFF

Yield: 4 Servings

1 oz Sun dried tomatoes
1 lb Chicken fillets
Ground white pepper
2 T Flour
1 1/2 T Oil
1 md Onion, thinly sliced
1/2 lb Mushrooms, sliced
1/2 t Ginger, chopped
1/2 t Dried thyme
4 t Cornstarch mixed with
2 T Water
1/2 t Sugar
1 c Skim yogurt
1/2 lb Fettuccine
2 Garlic clove, crushed
1/4 c Chicken stock
3/4 c Dry white wine
2 T Dry sherry
Freshly chopped parsley

In a small bowl soak tomatoes in hot water to cover, until very soft,
about 1hr. Drain well, cut into strips, & set aside. Mix flour &
pepper in small bag & add chicken. Toss to coat. Heat 1T oil in
non-stick pan. Add chicken, shaking off excess flour, about 1/2 at a
time, & cook, stirring often, till lightly browned. Remove from pan
& repeat with remaining chicken. Heat remaining 1-1/2tsps oil. Add
onion, mushrooms, ginger & thyme, cook, stirring often, till onion is
soft & mushrooms are lightly browned(10-12mins). Meanwhile stir
cornstarch mixture & sugar into yogurt & set aside. Cook noodles,
drain & keep warm. Stir garlic into mushroom mixture & cook 1min.
Stir in stock, wine & sherry. Bring to boil, stirring. Add
tomatoes, chicken, parsley & yogurt mixture. Bring to boil, stirring
till sauce is thickened. Place noodles around outside of plate with
chicken in centre & serve.
