Recipe: Lime Cucumbers

Salads - Assorted
LIME CUCUMBERS

2 tablespoons olive oil
1 tablespoon lime juice
1/2 teaspoon grated lime rind
1/4 teaspoon salt
1/8 teaspoon pepper
1 large burpless, seedless cucumber, thinly sliced

In bowl, whisk together first five ingredients.

Add cucumber and mix well.
