FETA, ROASTED GARLIC AND SPINACH OVER PASTA
1 pound spaghetti, uncooked
1/2 cup feta cheese, crumbled
1 pound fresh spinach leaves, well-washed and drained
8 cloves roasted garlic, peeled and cut into slivers
flavorful olive oil
crushed red pepper flakes (optional)
Bring a large pot of water to boil and cook pasta. Drain and divide between four bowls.
Sprinkle the feta, spinach, and garlic over warm pasta; toss together. Serve with olive oil and red pepper flakes, if desired.
