Recipe: Waldorf Salad (using Cool Whip and orange juice concentrate)

WALDORF SALAD

2 1/2 cups diced Red Delicious apple (about 2 medium)
1 tablespoon frozen orange juice concentrate
1/2 cup chopped celery
1/4 cup chopped walnuts
1/4 cup raisins
1/3 cup frozen reduced-calorie whipped topping, thawed

Combine apple and orange juice concentrate in a bowl; toss well. Stir in celery, walnuts, and raisins. Fold in whipped topping. Serve immediately.

Makes 6 servings (1/2 cup each)
