Recipe: Lobster Bisque

Lobster Bisque==

Serves 6
cooking time 30 to 35 minutes

Ingredients
2 tablespoons pearl tapioca
3 cups milk
1 teaspoon salt
dash of seasoned pepper
1 small onion, minced
a bouquet garni
2 cups cooked lobster
2 tablespoons butter
1 cup cream
2 tablespoons brandy
paprika or chopped parsley

Method
Crush the tapioca, combine with 2 cups of milk in a deep pan and set aside to soak for 1 & 1/2 hours. Add salt and seasoned pepper, paprika, onion, a bouquet garni of parsley, bay leaf and thyme and remaining milk and bring to the boil, reduce heat, cover and simmer for 20 to 25 minutes. Discard bouquet garni, stir in lobster and butter in small pieces and simmer for 3 to 4 minutes.
Stir in cream and brandy and heat, but do not boil. Ladle into warm bowls and sprinkle with paprika or chopped parsley.

Oyster bisque

Serves 4
cooking time 18 to 20 minues

Ingredients
3 tablespoons butter
3 teaspoons dried onion flakes
2 bottles (20's) oysters, well drained
3 cups warm milk
1/2 cup cream
salt and pepper to taste
pinch of paprika
1/2 cup (4ozs) dry white wine
chopped parsley

Method
Melt buter in the top of a double boiler over simmering water, add onion flakes and cook, stirring for 1 to 2 minutes.
Add oysters, stir in warm milk, cream, salt, pepper and paprika and cook for 8 to 10 minutes, until oysters float to the surface.
Stir in wine and heat, then serve, sprinkled with chopped parsley.
