I agree! Sandwiches can be so boring! I often make crepes and use leftovers from dinner the night before. You can simply roll up beef and gravy (or any leftovers) into a crepe or two and reheat it in the microwave oven at work.
I also make quiche (again, you can use any combination of leftovers for a quiche). Quiche can also be served at room temperature.
Lastly, Cornish pasties are always delightful! English miners used to carry them in their lunches to the coal mines. Pasties were made from pastry crust (just like pie crust) and filled with whatever was left from dinner (meat, gravy, potatoes, vegetables). Pasties are shaped like half-moons. You simply make a circle of pastry, place the filling on 1/2, fold the other half over, seal it and bake it.
If refrigeration is not an issue, pasta salads are wonderful in lunches. You can add cooked shrimp, cooked chicken, vegetables, etc. for a very hearty meal.
And, finally, a thermos full of warm stew or soup with a crunchy roll is wonderful during the winter months.
