CHIPOTLE CHICKEN SOFT TACOS
7 oz. packaged chicken breast
1 cup canned potatoes
1/2 cup canned sweet corn,
2 to 4 chipotle chiles
2 Tbsp. sweet onion
1/4 cup apple cider vinegar
5 Tbsp. fresh lime juice
1/3 cup fresh cilantro
Salt and pepper
1 ripe avocado
Soft tortillas
In medium-sized bowl, combine chicken, potatoes and corn (all drained); chipotles and minced onion.
In screw-top jar, combine vinegar, lime juice, salt and chopped cilantro; shake vigorously. Pour over chicken mixture and toss. Season with salt and freshly ground pepper. Let sit 30 minutes to allow ingredients to meld.
Mix in peeled, pitted and diced avocado. Serve folded in soft tortillas.
Makes 2 to 4 servings
