Recipe(tried): Homemade frozen lunches
Recipe CollectionsMy husband works second shift so he likes bigger dinners. Not to mention if I don't line up things for him to eat for lunch he would eat fast food every day! To help him stay healthy I make meals and freeze them. He loves it, it saves money buying in bulk and I am even able to sneak in veggies! Here are some ideas
Meatballs and Spaghetti
Jambalaya
Mexican Rice
Meatballs and Baby Red Potatoes with a veggie
Lasagna
Beef Stroganoff
Chicken, mashed potatoes and a veggie
Chicken Parmesan
Buy one of those huge packs of boneless skinless chicken breast, Italian seasoned breadcrumbs, mozzarella, eggs, ziti noodles (or any other size) and a large jar of spaghetti sauce. Dip the chicken in the eggs and then in the breadcrumbs. Place them in a glass baking dish uncovered and cook until finished. Boil noodles on the oven. Make sure that you do not over cook them. You almost want them just a little not done so they do not get soggy when you reheat them. Rinse the noodle in cold water when done. Mix the sauce and noodles together. Let everything cool off, line up some Tupperware and put the noodles and sauce in each. Then place the chicken on top. Sprinkle with Mozzarella and freeze.
