I am always trying to squeeze more vegetables into our diet. I tried something similar to this before, and we used in on place of potatoes on shepherd's pie...we all loved it.
It's an unconventional concept, but if you try it, you will probably like it, too.

Magic Mashed "Potatoes"
(looks like mashed potatoes, but made from cauliflower...)
1-3 large cloves garlic
1 medium head cauliflower, cut into florets
2 tsp canola oil
1/4 cu low-fat milk
1-3 TBS canola oil or olive oil, as needed
salt and white pepper
Mince garlic and set aside.
Place cauliflower in one layer on 1 or 2 large, microwave-proof plates or in shallow dishes. Sprinkle with water. Cover with 2 layers of wet paper towels. Steam in a microwave until soft but not mushy, 4-6 mins.
Let cool slightly.
Meanwhile, saute garlic in canola oil. Add milk and heat, do not boil. Transfer milk mixture to a blender or food processor. Add 2 TBS oil. Add cauliflower and puree until smooth. If puree is too dry or thick, put blender on low, and gradually add more oil in small batches until desired consistency is reached. The mixture should be fluffy. Season to taste with salt and pepper.
If necessary, reheat in microwave.
