In response to Michelle in Skowhegan on maple whoopie pies, I tried the recipe from Barbara-Memphis. I made them with a few tweaks. I used 1 tablespoon unsweetened cocoa powder and 4 more tablespoons flour. I also used maple extract in place of the vanilla. My husband is fussy but agreed they were the best tasting maple flavored pies.
