Recipe: Spicy Baked Chicken Wings (Pollo Alla Diavolo)

2 pounds chicken wings
Juice of 1 lemon or lime
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon dried basil leaves (or marjoram)
2 tablespoons paprika
Salt and ground black pepper (to taste)
3 to 5 tablespoons mild Dijon mustard
1 tablespoon olive oil
Cut the chicken wings into two parts each, the little drumstick and the wing tips. Alternatively, you can purchase the wings cut up like this or leave them in one piece.
Toss the chicken with the lemon or lime juice, cinnamon, cumin, basil or marjoram, paprika, salt, pepper, mustard and olive oil.
Preheat the oven to 375 degrees F.
Arrange the chicken on a baking sheet and bake for 35 to 40 minutes, turning several times, until the chicken is sticky and crusty and browned. If the chicken is not crispy, raise the heat to 400 degrees F for the last 10 minutes.
Remove from the pan and blot gently on absorbent paper. Serve right away and eat hot.
