MARASCHINO CHERRY PECAN BREAD
"You can dress this bread up or down, and you'll love it either way. Combine green and red maraschino cherries for a festive holiday bread, or substitute your favorite dried fruits for a sweet morning meal with a light crunch."
FOR ONE (1 LB.) LOAF:
3/4 cup water
2 teaspoons butter
7 whole maraschino cherries*
2 cups white bread flour
1 tablespoon instant nonfat dry milk powder
4 teaspoons sugar
3/4 teaspoon salt
2 1/2 tablespoons raisins
2 1/2 tablespoons sunflower seeds
2 1/2 tablespoons chopped pecans
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1 1/2 teaspoons fast-rise yeast (or 2 teaspoons active dry yeast)
FOR ONE (1 1/2 LB.) LOAF:
1 cup water
1 tablespoon butter

FOR ONE (2 LB.) LOAF:
1 1/3 cups water
1 tablespoon butter
11 whole maraschino cherries*
4 cups white bread flour
2 tablespoons instant nonfat dry milk powder
2 tablespoons sugar
1 1/4 teaspoons salt
1/4 cup raisins
1/4 cup sunflower seeds
1/4 cup chopped pecans
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 1/2 teaspoons fast-rise yeast (or 2 teaspoons active dry yeast)
This recipe can be made with the white, rapid, sweet or delay bake cycles.
Add ingredients to the bread machine according to manufacturer's suggestion. Add the fruit and nuts at the beep on the fruit and nut cycle or at the end of the first kneading cycle.
*Drain cherries well on a paper towel; add whole for best appearance. Try replacing half the cherries with chopped dried apricots, dried pears, dates or dried apple.
