CINNAMON-SUGAR PHYLLO TWISTS
6 sheets phyllo dough, thawed
1/3 cup sugar
1/2 teaspoon ground cinnamon
2 tablespoons butter, melted
Confectioners' sugar for sprinkling (optional)
Preheat oven to 350 degrees F.
Combine sugar and cinnamon in a small dish.
Lay 1 sheet of phyllo on a clean, dry surface, keeping the remainder of the phyllo covered with a tea towel. Brush lightly with some of the butter. Sprinkle with the cinnamon sugar, using about one-fifth.
Repeat with the next 4 sheets, then top with the last sheet of phyllo. Press down gently to help the layers adhere to one another.
Cut the stack of phyllo lengthwise, then widthwise in half, to make quarters.
Working with one quarter at a time (keep the others covered), cut lengthwise into 4 strips, then in half widthwise to make eight 1 1/2 by 4-inch strips.
Twist each strip once to make a little bow tie and place five-sixteenths to 1 inch apart on a cookie sheet that has been lightly sprayed with nonstick spray.
Bake for 10 to 12 minutes, until golden. Transfer to a wire rack to cool.
Sprinkle cooled cookies with confectioners' sugar, if using.
Makes 32 twists
