Margarita Caesar Salad

Lime wedges -- optional
Kosher salt -- optional
1 large head romaine lettuce -- torn
1 cup shredded Monterey jack cheese
1/4 cup finely chopped fresh cilantro
1 sweet red pepper -- cut in thin strips
Margarita Dressing
1/3 cup canola or safflower oil
1/4 cup lime juice
2 tbl egg substitute
1 1/2 tbl tequila
1 1/2 tsp Triple Sec
1 clove garlic -- minced
1 serrano pepper -- seeded and chopped
1/4 tsp salt
1/4 tsp ground cumin
Tortilla Triangles
6 6" corn tortillas -- cut in small wedges
1/2 cup canola or safflower oil
Kosher salt

For salad:
Rub rims of 6 chilled salad plates with lime wedges, if desired; place salt in a saucer, and roll rim of each plate in salt, set aside. Combine lettuce and next 3 ingred. in a large bowl; add Margarita Dresing, tossing gently. Arrange salad on plares, and sprinkle with tortilla triangles. Garnish with lime wedges, if desired.

For dressing:
Combine all ingred.; mix well with wire whisk. Cover and chill. Yield: 1 cup

For tortilla triangles:
Fry tortilla triangles in hot oil in small skillet until golden brown; drain on paper towels, and immediately sprinkle with kosher salt. - - - - - - - - - - - - - - - - - - -
