MARINATED TOFU SALAD
"Hailed as the latest superfood, the celebrated soybean has been shown to reduce artery-damaging LDL cholesterol levels, protect aging bones and reduce the risk of breast and prostate cancers. Despite the hoopla, many remain stupefied by what to do with the little bean. Here's a tofu dish that proves how easy it is to experience the goodness of soy."
2 tablespoons extra-virgin olive oil
1/4 cup red wine vinegar
1 teaspoon salt
1 teaspoon basil
1/2 teaspoon black pepper
1/2 teaspoon oregano
1 (10-ounce) package firm tofu, cut into 3/4-inch cubes
1 head green leaf lettuce
10 cherry tomatoes, halved
1/4 red onion, sliced
Combine oil, vinegar, salt, basil, pepper and oregano. Add tofu, stir and marinate 10 minutes.
In large bowl, combine lettuce, tomatoes and onion. Add tofu to salad and toss.
Yield: 6 servings
Nutritional information (per serving): 96 calories, 5 grams protein, 6 grams carbohydrates, 7 grams fat, 66 percent calories from fat
