Recipe: Elvis' Spicy Baked Apples

ELVIS' SPICY BAKED APPLES

"Nothing's nicer than a baked apple at the end of a big meal. Rome Beauty apples bake best."

4 apples
1/4 cup raisins
1/4 cup chopped walnuts
1 tablespoon packed brown sugar
1/4 cup lemon juice
1/4 cup water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Whipped cream or ice cream (optional, for serving)

Preheat the oven to 350 degrees F.

Peel the apples down one-quarter of the way and core them, leaving the bottoms intact. Arrange the apples in an 8-inch round baking dish.

In a small bowl, combine the raisins, walnuts, and sugar. Stuff the mixture in the centers of apples.

Combine the lemon juice, water, and spices and pour over and around the apples.

Bake, uncovered, basting every 15 minutes, for 1 hour or until the apples are tender.

Serve with whipped cream or ice cream

Makes 4 servings
