Recipe(tried): Meat Loaf with Tomato-Pine Topping

This was a winner in our house Saturday(now Sunday here). We are not big on meatloaf but the budget was tight this week & to our surprise this was very good. It came from a potato cookbook.

MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: MEAT LOAF WITH TOMATO-PINE TOPPING
Categories: Mince
Yield: 6 Servings

2 md Potato, cooked & mashed
18 oz Ground beef
1 Egg
1 oz salt reduced french onion soup mix
1 c Skim milk
1/4 c Tomato ketchup
1 pn Dry mustard
4 t Brown sugar, packed
3 sl Pineapple

Combine potatoes, beef, egg, soup mix & milk. Mix well & spoon into
loaf pan. Combine ketchup, mustard & sugar. Spread over top of
meatloaf, place pineapple on top & microwave on High 25mins. Stand
5mins before serving.

250cals/serve 9.22g fat/serve JA(JGMTC)
