Recipe(tried): Mexican Avocado Salad

Salads - Assorted
MEXICAN AVOCADO SALAD

DRESSING:
1 ripe avocado, mashed
1/2 cup sour cream
1/3 cup salad oil
2 tbsp lemon juice
1 garlic clove
2 tsp chili powder,
1 tsp sugar
1/2 tsp salt
SALAD:
2 kinds of salad greens, your choice
3 tomatoes, cut up
1 sliced ripe avocado
2/3 cup grated cheddar cheese
4 green onions, sliced
1/3 can sliced ripe olives
1/2 pkg roasted, salted, pumpkin or sunflower seeds

1/2 pkg crumbled Fritos corn chips, added last

Combine all dressing ingredients and chill before serving.

When ready to serve, in large bowl, tear salad greens and toss with remaining salad ingredients except corn chips.

Pour on chilled dressing and mix.

Add crumbled Fritos corn chips last thing before serving.
