Recipe(tried): Peanut Crunch Slaw

PEANUT CRUNCH SLAW

4 cups shredded cabbage
1 cup celery
FOR THE DRESSING:
1/2 cup sour cream
1/2 cup mayonnaise
1 teaspoon salt
1/4 cup chopped green onion
1/4 cup chopped green pepper
1/2 cup chopped cucumber
FOR TOPPING:
1 tablespoon butter
1/2 cup salted peanuts, chopped
2 tablespoons Parmesan cheese

Toss cabbage and celery together; chill.

TO PREPARE THE DRESSING:
Mix together sour cream, mayonnaise, and salt. Stir in onions, green peppers and cucumber; chill.

TO PREPARE THE TOPPING:
Just before serving melt butter in small skillet; add peanuts and heat until lightly browned.

Immediately stir in cheese.

Toss chilled vegetables with dressing.

Sprinkle peanut-cheese mixture on top.
