Recipe: Mexican Meatballs Appetizers (using chili seasoning mix)

MEXICAN MEATBALLS APPETIZERS

"These quick and easy homemade appetizers are extra special when served with fancy wooden skewers!"

1 egg
1/2 cup water
1 package Durkee Original Chili Seasoning Mix
1/2 cup cornmeal
1 1/2 pounds lean ground beef
2 cups tomato juice
1 tablespoon lemon juice

Combine egg, water and 2 tablespoons of seasoning mix, stirring to combine. Add cornmeal and ground beef. Shape into small meatballs and arrange on ungreased baking sheets.

Bake in a preheated 450 degree F oven for 10 to 15 minutes until brown.

Mix together tomato juice, lemon juice and remaining seasoning mix in large skillet over medium heat. Simmer; add meatballs when done baking. Keep warm and serve immediately.

Makes 40 meatballs
