Recipe(tried): Mexican Skillet Dinner

Tonight we had a simple yet delicious meal Mexican Skillet dinner is really a meal in one because it has a combination of meat, rice and corn included. It is one of those meals that you can rush to the kitchen, and a few minutes later have a hot nutritious meal ready. After a busy day of shopping today, it was the perfect meal for us. With it I served homemade Texas toast and iced tea. We are going to have some more of the fresh cantaloupe that we had yesterday. I am so thankful that they are vegetable and garden stands carrying fresh fruits and vegetables, the produce is so much better at those stands that the fruits and veggies I had been purchasing at our local stores. Mexican Skillet Meal

1 lb. ground chuck
1 14 1/2 oz. can Mexican tomatoes
3/4 cup tomato juice
1 cup water
1 cup frozen whole kernel corn(you can also use canned)
1 tsp. chili powder
1/2 tsp. salt
1/4 oregano
1/2 tsp. pepper
1 garlic clove, minced
1 3/4 cup uncooked minute rice

Brown chuck in skillet, drain and set aside.
Combine tomatoes, juice, water, corn and spices in skillet, and bring to a boil. Boil 5 minutes. Reduce to simmer, add ground chuck and rice to mixture. Cover and cook an additional 5 minutes or until rice is tender. Remove from heat and allow mixture to thicken (about 5 minutes). Serve.
