I don't know about a pressure cooker, but the microwave and short time works for me.
MICROWAVE CARAMELS
1 cup butter, melted (do not use margarine)
1 cup white (light) Karo Corn Syrup
1 cup white granulated sugar
1 (14 oz) can Eagle Brand Milk (sweetened condensed milk)
1 cup brown sugar (packed)
1 cup chopped cashews or pecans (optional)
Stir together all ingredients except the nuts, very well in a microwave safe bowl. (2 qt measuring cup)
Cook in microwave on HIGH setting for 15 minutes (original recipe is 14 minutes). Do not stop the microwave and do not stir during the cooking time.
Remove the bowl from the microwave and place on a hot pad. Add nuts at this time.
Using a hand held electric mixer, beat the mixture for a full 2 minutes. Pour into a buttered 9X13-inch pan. Refrigerate to slightly firm up mixture.
Cut into little pieces and wrap in individual wax paper squares. Store wrapped caramels in refrigerator.
