Recipe(tried): Microwave croutons

Misc.
Believe it or not, you can actually make crunchy croutons in your microwave oven! The secret is to use oil or butter. The method I've used many times goes something like this:

First of all, let me apologize for not having exact measurements - I just use what "looks" right, so you'll have to go by instinct!

In a wide microwavable dish (I use Pyrex), place 3-4 tablespoons olive oil or butter, or a mixture of both. (If using butter, melt it in the microwave first.) Sprinkle the desired seasonings (garlic powder, salt, italian herbs, etc.) over the oil, add bread cubes (just enough to have a single layer) and toss lightly to coat. Heat on high for approx. 4 minutes (you should hear the fat start to sizzle), remove from oven and stir. Heat for another few minutes - at this point you'll need to keep an eye on them to get them to the right amount of doneness. As they cool down, they will become crispy. These keep well in an airtight container.
