Okay so I took the Panko idea and ran with it and I must say it is PERFECT texture.The Sauce, I tried a few recipes and in the end they where never quite right. Here in Wisconsin they sell the bag about 64oz for 20 bucks at my local TGIF. Any way back to the recipe for the chicken.
JACK STRIPS
1 lb. boneless chicken thighs or breast, i used thighs
2 cups all purpose flour
2 eggs
2 tbsp salt
2 tbsp paprika
1 tbsp black pepper
2 cups buttermilk
1 bag Welpac panko bread crumbs
Set up 3 containers. In the first mix the flour, salt, paprika and black pepper, mix well. In the second container place the butter milk and 2 eggs and beat them well. In the third container place the Planko Bread Crumbs.
Also set up a dish to hold the chicken before you deep fry it as many fryers can't handle a pound of chicken all at once.
Place the chicken in the flour and get in well covered then dip it in the butter milk/ egg mix and finally put it in the Panko bread crumbs. Then fry it, after a few minutes about 7 minutes take out and repeat till you are done with all the chicken.
BEWARE if you pour some Jack sauce to try the chicken in you will NOT STOP EATING!!!! The taste of the chicken is okay but the texture of the mix and chicken with sauce is AWESOME!!!!
