Recipe: Minced meat curry and banana potjie
Misc. Minced meat curry and banana potjie
For this you will need: cup cooking oil
500g minced beef (or 1kg if you don't like pork)
500g minced pork
1 large onion, finely chopped
3 cloves of garlic, finely chopped
2 tablespoons of curry powder (more, if you like it stronger!)
cup smooth apricot jam
2 tablespoons chutney
1 can of tomatoes, drained and roughly chopped
cup sultanas
cup meat stock (ordinary beef cubes are fine)
4 firm bananas
(Optional "extras" - 2 bay leaves; 2 curry leaves and 2 finely crushed cardamom pods).
You can make this dish indoors on the stove, or outdoors on the fire in a potjie. For this exercise, we will be using the potjie. Pour the oil into the pot, add the onion, meat and garlic and fry until meat starts to brown. Add the curry powder (and any other condiments you are using). Mix the stock and the jam in a small saucepan and pour into the potjie. Add salt and pepper and sprinkle sultanas over the meat. Finally add the tomato. Replace the lid, turn on the music, pour yourself a glass of wine and relax. It is now a good time to serve the starter, because the potjie will take about an hour to simmer to perfection. Five minutes before serving, slice the bananas and place them on top of the meat.
