Hi Colleen:-) A year or so ago, someone, at this site, suggested that to keep muffins from becoming soggy, just put them on a plate, covered loosely with waxed paper. I usually just keep the amount I plan to use the next morning out. The remainder, I freeze. When we want more, I get those from the freezer the night before and set on a plate covered loosely with waxed paper. It works well. We never have soggy, sticky muffins anymore. Of course, you don't want to have them out, covered this way, for too long. because they will dry out. I hope this helps you, Colleen.
