Minestrone Soup (not Carrabba's)

1 can cannelini beans
1 onion
1 carrot
2 ribs celery
2 to 3 medium size potatoes
1 to 2 small zucchini
1/4 lb green beans
1 1/4 lbs cabbage
1/2 cup olive oil
3 tbsp butter
1/3 cup grated parmesan cheese
2 cans beef broth
2 cans water
1 can stewed tomatoes with their juice (cut in pcs)
salt

Slice onion, dice carrots, celery, potatoes and zucchini. Cut green beans in 1/4-inch lengths. Shred cabbage

In a large pot heat oil and butter over medium heat. Add onion and cook until soft, about 2 minutes. Add carrots and cook 2-3 minutes stirring a few times. Repeat with celery, potatoes, zucchini and green beans, cooking each a few minutes and stirring. Cook for 2-3 minutes. Add cabbage and cook for about 6 minutes stirring occasionally.

Add broth, water, stewed tomatoes with their juice and a little salt. Cover and cook over low heat for at least 3 hours.

Fifteen minutes before soup is done, add the cannilini beans. Just before taking soup off heat, stir in the grated cheese.
