Recipe: Mini Pizza Bites (using biscuit mix, freeze ahead)

"Besides being tasty appetizers, these bites are a great after-school snack for little ones."
3 cups biscuit mix (like Bisquick)
2/3 cup hot water
1 cup shredded cheese such as Cheddar, Monterey Jack, or provolone
1/4 cup thinly shredded basil (or an equal amount of dill)
4 Roma tomatoes, seeded and diced (about 1 cup)
Preheat oven to 375 degrees F. Line a 13x9-inch baking pan, lined with parchment paper
In a large bowl, blend biscuit mix and 2/3 cup hot water. When dough comes together, place on a surface that has been dusted with biscuit mix. Knead for 3 minutes or until firm. Cover with a dry towel and let rest for 5 minutes.
Press dough into prepared baking pan. Top with shredded cheese, basil and tomatoes.
Bake in center of preheated oven until crust is golden brown and cheese is bubbling, 12 to 20 minutes. Let cool in pan for 5 minutes, then cut into 11 (2-inch) squares.
TO FREEZE AHEAD:
You can keep a batch of pizza bites in the freezer. After baking, let cool completely and place in freezer bags; freeze for up to 3 months. Thaw and warm in foil in 300 degree F oven until hot, about 10 minutes.
