Main Dishes - Casseroles
CHEESY BROCCOLI AND CHICKEN CASSEROLE

2 boneless skinless chicken breasts
10 to12 oz broccoli florets, bite-sized
1 medium yellow onion, finely chopped
3 to 4 stalks celery, chopped
1 1/2 teaspoons Salt
1/2 teaspoon ground white pepper

6 slices toasted bread, buttered

Preheat oven to 375 degrees F. Spray PAM in a 9x13 baking dish.

Cook chicken in a skillet browning slightly. When slightly cooled cut into small bite sized pieces or shred into bite sized pieces. (The meat from half of a rotisserie chicken can be substituted for this.)

Cook broccoli until it just starts to become tender then remove from heat and rinse to stop cooking process.

Lightly brown chopped onion and celery in skillet until the onion is translucent.

Layer broccoli into bottom of dish spread chicken over top of the broccoli. Spread the onion and celery over the chicken. Sprinkle seasonings over casserole evenly. Pour Ragu Cheese Sauce over casserole.

Butter toast and cut into bite sized squares. Place toast pieces on top of casserole.

Bake in oven for 30-40 minutes (until broccoli is completely tender).
