MINCEMEAT COOKIES
Makes 5 dozen 3-inch cookies
1 cup shortening (Crisco)
1 1/2 cup sugar
3 eggs beaten
3 1/4 cup flour
1 tsp. baking soda
1/2 tsp. salt
1 (9 ounce) box of Nonesuch dried mincemeat (in a box)
Preheat oven to 400 degrees F. Grease baking sheets.
Cream shortening and sugar. Add eggs to shortening and sugar, beat till smooth.
Sift together flour, baking soda and salt. Gradually add to creamed mixture. Crumble mincemeat and stir in.
Drop from teaspoon, 2 inches apart onto greased baking sheets.
Bake for 10-12 minutes until lightly browned.
