GEORGIA PEACH FRITTERS
2 cups flour, sifted
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup butter, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
2 eggs, beaten
3/4 cup milk
1 1/2 cups chopped peaches
1/2 teaspoon lemon juice
Oil (for deep frying)
Whipped cream or confectioner's sugar (for serving)
Sift the flour, baking powder and salt together; set aside.
Cream the butter, sugar and vanilla in a mixer bowl until light and fluffy. Beat in the eggs. Beat in the dry ingredients alternately with the milk; set aside.
Combine the peaches and lemon juice in a bowl and mix well. Fold into the batter.
Drop by teaspoonfuls into deep 365 degree F oil. Deep-fry for 3 to 4 minutes or until golden brown, turning once. Drain on paper towels.
Serve with whipped cream or sprinkle with confectioners' sugar.
