MINI SKILLET MEATLOAVES
1 pound extra-lean ground beef
1 egg, slightly beaten
1/2 cup bread crumbs*
1/4 cup milk
1/2 cup grated Parmesan cheese
1 small onion (1/2 cup finely chopped)
1 tablespoon Worcestershire sauce
1 tablespoon dried parsley
1 tablespoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup ketchup or tomato sauce (for topping)
Crumble the meat into a large bowl. Add the egg, bread crumbs, milk and Parmesan cheese and mix them together using your hands. Add all remaining ingredients except the ketchup, and mix together with your hands.
Heat over medium-high a 12-inch, non-stick skillet that has a lid.
Form 6 meat patties no thicker than 1 inch, and cook for 4 to 6 minutes on each side, until the meat is no longer pink.
Pour the ketchup evenly over the patties and cover the skillet, reducing tie heat to medium-low Continue to cook for 1 minute to warm the ketchup. Serve at once.
*Cook's note: We tested this recipe using Progresso brand plain (or Italian-style) bread crumbs.
