Recipe: Slow Cooker Barbecue Chicken (with homemade BBQ sauce)

SLOW COOKER BARBECUE CHICKEN

1 (3 to 31/2 lb) chicken, cut into 8 pieces
1 onion, chopped (about 1 cup)
1 (6 oz) can tomato paste
1/4 cup packed dark brown sugar
1 tablespoon cider vinegar
1 tablespoon soy sauce
1 tablespoon dry mustard
1 tablespoon ground cumin
2 cloves garlic
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon dried thyme
1/4 teaspoon ground cayenne pepper

In slow cooker combine chicken, onion, tomato paste, brown sugar, vinegar, soy sauce, mustard, cumin, chopped garlic, garlic powder, chili powder, thyme and cayenne; toss well to combine.

Cover crock pot. On LOW setting cook until chicken is tender and no longer pink near bone, 7-8 hours.
