Recipe: Mock Lobster

This is from Jean Pare's fish and seafood book. I have not tried it.

1 1b. Monkfish,shark or cod fillets
2 T. salt
Cold Water , to cover

2 T. White vinegar
4 Peppercorns
1/2 Small bay leaf
Cold water, to cover

Butter or hard margarine, melted

Place fillets and salt in saucepan. Cover with water. Bring to a boil. Simmer
gently for 10 minutes. Drain.

Add vinegar, peppercorns, and 1/2 bay leaf. Cover with water once more. Bring to
a boil. Simmer gently for 10 minutes. Drain. Cut in to bite size pieces and dip
in melted butter. Makes 4 servings.
