Recipe: Mama D's Zucchini Casserole (using mushrooms, parmesan, and mozzarella)

4 small zucchini
1/4 cup oil
2 onions, chopped
2 cloves garlic, minced
1 pinch salt
1/2 teaspoon pepper
1/4 teaspoon oregano
4 ounces mushrooms, sliced, drained
1/4 cup grated Parmesan cheese
1/4 cup coarsely grated mozzarella cheese
Preheat oven to 375 degrees F.
Cut zucchini crosswise into 1 inch slices. Cook in salted boiling water until tender. Don't overcook. Drain; set aside.
Heat oil in a saucepan and saute onions and garlic.
Add salt, pepper, oregano and mushrooms and saute for 5 minutes.
Add zucchini and Parmesan cheese. Transfer to an ungreased casserole, sprinkle with mozzarella.
Cover and bake in a 375 degree oven until cheese melts. Serve hot.
