In this steaming weather, why not try Mike Roy's recipe for
MOLDED SANGRIA
1 cup orange sections (or mandarin oranges, drained)
1/2 cup very thinly sliced tart apples, peeled & cored
1/4 cup brandy
1 Tablespoon Cointreau, Triple Sec or Grand Marnier
2 cups dry red wine
3 whole cloves
1 cinnamon stick
1 (6-oz) pkg lemon Jell-O
Juice of 1 lime
1 (12-oz.) bottle chilled club soda
Marinate fruits in brandy and Cointreau for 30 minutes at room temp. Bring wine, cloves and cinnamon stick to a boil, then strain to remove spices. Pour wine over Jell-O and stir til dissolved,, Add lime juiceand soda. Chill until slightly thickened; stir in fruit and marinade. Spoon into sherbet glasses or pour into oiled mold and chill until firm. Makes 5 1/4 cups or 8-10 servings.
I have served this both as a salad and as a dessert. VERY impressive!
