Recipe: Morning Glory Muffins

Shar, I'm sure that this is what you want. I have it in my "Muffin Mania" Book.

Morning Glory Muffins

2 c. all purpose flour
1 1/2 c. white sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrot
1/2 c. raisins
1/2 c. nuts
1/2 c. coconut
1 apple, peeled, cored & grated
3 eggs
1 c. veg. oil
2 tsp. vanilla

Mix in the first 5 ingredients in a large bowl. Stir in the next 5. In a bowl, beat the eggs, oil and vanilla together. Stir into flour mixture until batter is just combined. Spoon into well greased muffin cups, filling to the top. Bake at 350F for 20 minutes. Makes about 14 large muffins.
