Recipe: Mozzarella, Chicken, and Linguine Casserole

MOZZARELLA, CHICKEN, AND LINGUINE CASSEROLE

3 cloves garlic, crushed
1 Tbsp cooking oil
1 to 2 lbs. boneless chicken
1 lb. linguine
2 cans (8 oz each) tomato sauce
1/4 cup hot water
1 (4 oz) can sliced mushrooms, drained
salt and pepper to taste
4 oz. mozzarella cheese, shredded

Brown garlic in hot oil.

Cook chicken 3 minutes on each side in oil.

Cook linguine; drain.

Mix tomato sauce, hot water and mushrooms in a bowl. Salt and pepper to taste.

Add the following to casserole dish: 1/3 sauce mixture, drained linguine, 1/3 sauce mixture, chicken, sauce mixture, mozzarella cheese. Repeat layers ending with cheese.

Bake at 325 degrees F for 20-25 minutes.

Servings: 6
