Recipe: Mushroom Almond Stuffing

MUSHROOM ALMOND STUFFING

1/4 cup butter
1 pound mushrooms, sliced
2 cups diced celery
1/3 cup slivered almonds, toasted
1/2 chopped cup onion
5 teaspoons poultry seasoning
1/4 teaspoon ground nutmeg
2 quarts bread cubes
3 tablespoons sherry
3 tablespoons water

Melt butter in skillet. Saute mushrooms until golden; push to one side.

Add celery; saute 2 to 3 minutes.

Remove pan from heat. Add almonds, onion, poultry seasoning, nutmeg and bread cubes; toss lightly. Sprinkle sherry and water into mixture, tossing lightly.

Stuff bird and roast. To bake in a casserole dish, place in greased casserole dish and bake during last 45 minutes of turkey's roasting time at 300 degrees F.

Makes stuffing for a 10-pound turkey
