Mushrooms Stuffed w/ Garlic Goat Cheese

MUSHROOMS STUFFED WITH GARLIC GOAT CHEESE

20 Mushrooms
3 T Olive oil
2 Shallots - chopped
4 Garlic cloves - chopped
2 Sun dried tomatoes - chopped
0.5 C Dry Sherry
1 t Rosemary, fresh
1.5 C Goat Cheese

Saut the shallots, tomatoes and garlic in the oil. Add the rosemary and wine and reduce to half the volume.

Mix the saut with the cheese. Stuff the mushrooms with the cheese in a rounded mound shape.

Brown the mushrooms with butter then bake 15 minutes in a 325 F oven.

Substitute cream cheese mixed with parmesan for the goat cheese if desired.

Select similar sized mushrooms.
