Recipe(tried): My Vegetable Soup

Hi Cheesehead,

When I make vegetable soup I decide what vegetables I want to use & chop them all up. I don't measure them because any combinations & amounts have always turned out fine. (I often make soup to use up extra vegetables I have, so I always have different combinations). I then cover the vegetables with either a vegetable or chicken broth (from a can), or a combination of water & vegetable broth. Then I add seasonings - salt & pepper, combinations of herbs, etc... You can taste the soup & adjust the seasonings to your taste, use whatever herbs you want. Simmer the soup until the vegetables are tender. (Note: when I use more tender veggies, like bell peppers or mushrooms, I add them near the end, after the firmer things like potatoes have become almost tender enough. Otherwise they will get overcooked). You can also adjust the amount of broth you add to make it more or less thick.

I have also used the Better Than Buillion soup base that Gina uses. This is very good. They have several different flavors. I like to use the vegetable flavor or the chicken flavor when I make vegetable soup, although other flavors would work well too. It comes in small jars in the soup section fo the grocery store. It tells you how much to use on the jar. I usually use a little more than what it says. I find that when I use this I use less seasonings.
Vegetable soup is fun because you can make it in so many different ways. You can even add rice, barley, or other grains if you want.

I hope this helps. I'm sorry I don't have a specific recipe, but I like to just chop things up & throw them in.
